This chicken is grilled after being marinated in a spicy marinade. The chipotle chiles give the marinade its smoky flavor. You can increase the heat to your liking with your favorite hot sauce. Habanero hot sauce works best, as very little is needed to increase the heat without changing the flavor of the marinade.

Pour Mixture Through A Fine Mesh Strainer Into A Pitcher, Then Using A Rubber Spatula Press And Rub Lime Zest Back And Forth Against Strainer To Release Oils From The Zest Into Pitcher. Pour In Remaining 1 Cup Cold Water And Stir. Serve Over Ice. So In Other Words--It Will Store For A Few Days And Be Ready To Drink Asap!
